better in time

I’m still in a lot of pain, thankfully the guys at work are helping me carry the heavy stuff. This sucks. I should hear back from the guy’s insurance tomorrow since a physical damage adjuster apparently looked at my car today. I am so pissed about the whole thing. Oh and it didn’t help that my son’s father (after ignoring his son for months including xmas and his son’s birthday for the second year in a row) felt the need to harass me while at work today via text message. Like I don’t have enough to deal with right now right?

My son however is doing great, has been a HUGE help since I can’t really bend or you know… do much of anything physically without ranting and raving about the evil that is the back pain. So we played with my camera last night, he SAID he was going to give me a kiss and well… he faked me out. Silly boy.

punchline

I heard from the guy’s insurance company today, basically, his insurance company told me today they believe I’M THE ONE AT FAULT because I SHOULD HAVE NOTICED HIM. Even though I was in the “proper” lane and he was coming AT ME , his FRONT SLAMMED into the right rear of my vehicle. I had to drive on my spare tire for A WEEK (until the awesome people at Midas repaired my tire and put it back onto my car for FREE).  So even though he admitted fault to me and my supervisor, he suddenly changed his story that now has him “cautiously inching out and being aware of his surroundings until I came out of nowhere”. Fuck that.

Did I mention the back pain that keeps me up at night? Has me crying at work? Sheer agony? I am going to make a doctors appointment first thing in the morning tomorrow.

ETA I saw the doctor, she gave me prescriptions for a muscle relaxer and ibuprofen. She said my back is really inflamed and swollen so she can’t tell the whole extent of my injuries but that if I am still hurting in one week that she will take a more aggressive approach and as it stands she believes I may need physical therapy. Insane isn’t it? This accident compared to last year was nothing and yet physically I am more screwed up.

chicken tortilla soup and ghetto peach crumble

Chicken Tortilla Soup

Ingredients

  • * 12 oz uncooked boneless, skinless chicken breast, cubed
  • * 6 oz Dole Bell Pepper, chopped
  • * 5 oz onion(s), chopped
  • * 2 oz celery, finely chopped
  • * 14 1/2 oz Progresso Fire roasted diced tomatoes
  • * 3 oz Green Giant Niblets Corn, Frozen
  • * 7 clove garlic clove(s)
  • * 1 Tbsp canned chipotle peppers
  • * 3 oz Kraft 2% Milk Natural Cheese Sharp Cheddar Cheese, shredded
  • * 1/2 tsp chili powder
  • * 1/2 tsp McCormick Ground cumin
  • * 1 oz cilantro
  • * 2 cup water
  • * 6 oz avocado, diced
  • * 3 small corn tortilla(s), baked and crumpled
  • * 15 oz canned black beans, drained and rinsed
  • * 2 stalks of green onion, finely sliced

Directions

Begin by spraying a non-stick spray in a pot, add the onion, bell pepper, and celery and cook until soft. Add the diced chicken and cook until no longer pink. Add the black beans, fire roasted diced tomatoes, green onions, 1 cup of the water, salt and pepper to taste.

Pre-heat the oven to 400 degrees and pop the corn tortillas on a cookie sheet and into the oven, cook until golden. About 10 – 15 min depending on your oven. Keep a close eye on these.

In a mini food processor, add the garlic, 1 cup of the water, the chipotle pepper, and the cilantro. Process until mostly smooth.

Add that to the soup. Add the shredded cheese, avocado, and the crumbled corn tortillas.

For those doing Weight Watchers it’s 4 points a serving. This recipe makes 7 servings. 1 cup = 1 serving. This soup is more stew like, you can add more or less water to taste if you want it more soupy.

Peach Crumble

Ghetto Peach Crumble

Ingredients

  • * 1 medium peach(es), diced
  • * 1/8 tsp ground cinnamon
  • * 1/2 tsp honey
  • * 1/2 cup Kashi Go Lean Crunch
  • * 1/4 tsp sea salt

Directions

Mix everything in a microwave safe bowl, pop it in for 3 minutes or until peaches get a bit soft. For those on Weight Watchers, this makes 1 serving at 2points.

now you’re gone

I’ve been doing nothing lately. Gas prices are close to $4 a gallon so we haven’t gone anywhere, it snowed a ton this weekend, and since I’ve had 3 days off in a row I’ve done little else but sleep. On the plus side I figured out how to curl in my hair in 15 minutes.

i’ll be there

Ah right now I am watching some special on TV, “Rock and Roll Circus” and it was during a Beatles segment, sure as fucking hell I have Yoko literally screaming into the mic, the camera pans to the audience who appears to be torn between covering their ears or laughing. Jesus.

Anyway, I had an eventful day that included the ever so much joy of a speeding ticket. Also my son lost his 3rd tooth as well.

Since I’m loosing the ability to write (or more so my brain has turned to mush) here is a journey into the joy that is youtube.
