I’ve been feeling exhausted all day long, not enough sleep and my neck is sore. I have no clue what to make for dinner and I’m really not in the mood to cook, and I want to rent a movie but… it’s cold, it’s raining… and I don’t have anyone willing to take me to rent a video.
*Sob*
Tonight I made whole wheat pasta, threw salad dressing on it, chilled it in the freezer for 3 min and thew it at the child in the corner..err..i mean handed it to her nicely in her high chair. LOL

Dinner — Pea Risotto
Enough for 2
1 oz butter
2 Tblspn Olive Oil
1 cup Arborio/Risotto Rice
1 Shallot or 1/2 sml Onion finely chopped
1 cup vegetable stock water
2 cups hot water
1 cup frozen peas
Grated Parmesan (or other cheese)
Melt the butter in the olive oil and gently fry the onions without browning.
Add the Rice and stir for about 2 minutes until translucent.
Add the cup of stock and simmer until absorbed, stirring all the time.
Repeat with 1st cup of water & the frozen peas.
Repeat with the 2nd cup of water.
Serve, season with fresh ground pepper & sprinkle the parmesan/cheese over the top and serve with crusty bread.
.… Variation — add the juice from a 7oz tin of Tuna in Brine with the 1st cup of water & peas, and then flake the tuna in with the 2nd cup of water.
