Recipe: Pumpkin Cookies

Okay for my oh so darling Kim purrr baby purrr… here is the recipe for the pumpkin cookie/cakey thingys!

  •   2     cups       Flour
  •   1     cup       Quick oats, uncooked
  •   1     teaspoon     Baking soda
  •   1     teaspoon     Cinnamon
  •     1/2 teaspoon     Salt
  •   1     cup       Butter or margarine, softened
  •   1     cup       Brown sugar, packed
  •   1     cup       Granulated sugar
  •   1             Egg, slightly beaten
  •   1     teaspoon     Vanilla
  •   1     cup       Libby’s solid-pack pumpkin

Preheat oven to 350 degrees. Combine flour, oats, baking soda, cinnamon and salt; set aside. Cream butter; gradually add sugars, beating until light and fluffy. Add egg and vanilla; mix. Alternate additions of dry ingredients and pumpkin, mixing well after each addition.

For each cookie, drop 1/4 cup dough onto lightly greased cookie sheet. Bake 20-25 minutes, til cookies are firm and lightly browned. You can ice them if you want to!

Yeah I had the glorious fun of rubbing up on Suzi today ehehhe bra fitting fun baby! Purrrrrrrr….

I think I am going to make a beef stew soon, cause my sister and I were discussing it earlier and the weather calls for it! With some cornbread maybe….

Ohhh, yummy Cornbread, stew and pumpkin cookies. 

I plan to get started on my canning apple butter and apple sauce this weekend.  Just when I will grab the many hours of time it takes, I don’t know. Argh…
